Rhubarb Cocktails

Hello! It's the most wonderful time of the year....rhubarb season is upon us!

This year, I've tried to take a most interesting/adventurous spin while using rhubarb. Don't get me wrong, rhubarb crisp will still be making an appearance later on in the week (it's a classic, obviously!) but I wanted to step out of the box a little and MAN OH MAN are there some good recipes coming your way!

Today you're getting not just one but TWO cocktail/mocktail recipes that will knock your socks off. Making a rhubarb simple syrup is all you need for these tasty drinks to sip all summer long! Follow along for the following recipes:

  • Rhubarb Simple Syrup

  • Blushing Rhubarb Whiskey Sour

  • Rhubarb Mojito Mocktail

Rhubarb Simple Syrup (makes 6 oz)


- 2 cups rhubarb, chopped

- 1 cup cool water

- 1/2 cup white sugar

- Juice from 1/2 lemon


1. In a medium size sauce pan, add in all ingredients. Cook over medium high heat for 8-10 minutes. Rhubarb will start to break down. Stir frequently with a wooden spoon.

2. Once heated through, place a large glass liquid measuring cup in your sink and place a fine mesh sieve on top. Carefully pour mixture into the sieve to remove any of the large rhubarb pieces. The simple syrup will strain, leaving you with a perfectly pink simple syrup in your measuring cup!

3. Discard remaining rhubarb in the sieve and place glass measuring cup in the fridge for simple syrup to cool.

Blushing Rhubarb Whiskey Sour (makes 1 drink)


- 1 oz. favourite whiskey

- 2 oz. rhubarb simple syrup

- Juice from 1 lemon

- Dash of egg white

- 1 cup ice cubes


1. In a cocktail shaker*, add in whiskey, rhubarb simple syrup, and lemon juice.

2. In a small bowl, crack an egg and separate white from the yolk. Place egg white in the small bowl and place in cocktail shaker. Discard egg yolk.

3. Fill up cocktail shaker with ice. Place on the lid and shake thoroughly for 30 seconds.

4. Pour drink into a short glass, add ice if you wish and garnish with a lemon slice.

5. Enjoy!

Rhubarb Mojito Mocktail (makes 1 drink)


- 1/2 cup of ice

- 2 oz rhubarb simple syrup

- Juice from 1 lime

- 3-5 mint leaves

- 1 cup sparkling/tonic water


1. In a tall glass, add in lime juice and mint leaves. Use a muddler or wooden spoon to incorporate mint and lime.

2. To the lime and mint mixture, add in rhubarb simple syrup and tonic water. Top with ice.

3. Serve cold with lime and mint as a garnish. Cheers!
