It’s Zucchini Bread Day!

Well well well....a BLOG! I’m so excited and hope that I can do this blog justice 😊 I’ve been having so much fun on my instagram page but hate to keep posting recipes in the comments, ya know?! So here she is.....let’s see how she goes!

 

First up is Chocolates Chip Zucchini Bread. One of my all time favourites. Sweet , moist, chocolatley goodness...need I say more? I’ve a adapted this recipe from the Chef Savvy (https://chefsavvy.com/chocolate-chip-zucchini-bread/?crlt_pid=camp.TDhMmZPYyFsk) to make it a (bit) healthier! 

 

Chocolate Chip Zucchini Bread 

  • 1½ cups all purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1 egg

  • ½ cup canola oil

  • 4 cup light brown sugar, packed

  • ½ cup sugar

  • ½ cup plain greek yogurt

  • 1 teaspoon vanilla extract

  • 1 1/4 cup zucchini, shredded

  • 1/2 cup semi-sweet chocolate chips

INSTRUCTIONS
  1. Preheat oven to 350 degrees.

  2. Butter and flour a 9 x 5 loaf pan and set aside.

  3. In a large bowl mix together the flour, baking soda, baking powder and cinnamon. 

  4. In a separate bowl, whisk together the egg, oil, both sugars, greek yogurt and vanilla extract until combined.

  5. Add the wet ingredients to the dry ingredients and fold gently. 

  6. Fold in the zucchini and chocolate chips.

  7. Pour the batter into the prepared pan and bake for 40-50 minutes or until a toothpick comes out clean.

  8. Remove from the oven and let cool in the pan for 20 minutes.

  9. Take the loaf out of the pan and allow it to cool completely on a wire rack.

  10. Slice bread and serve!
